Monosodium glutamate (MSG) enhances the taste of food and also possesses a specific taste, called umami taste. It is a Japanese word, which translates as “savoury” or “deliciousness”. Earlier, Kikunae Ikeda in 1908 identified MSG as the most stable salted formed from glutamic acid. Also, MSG has the most prominent flavor enhancing capacity and delivers a potent umami taste.
